Cinnamon Sugar Dessert Popcorn

I realize I am not the first or even hundredth person to make cinnamon kettle corn, but it was my first time trying it the other night and I am so smitten. The combination of the sweet and salty kettle corn  with the lightly spiced flavor of cinnamon is the perfect way to get your self in the holiday spirit! I have pleasant memories of attending my small little towns Cornish Christmas growing up.  At those events the street is closed to passing cars, carolers are singing on the corner and the scent of kettle corn is mingling with the crisp mountain air. Locals are clinging to hot cocoa to keep their fingers warm and children are bundled up, eyes bright with the excitement of the festivities. It creates the most amazing, almost euphoric atmosphere you can almost taste. In an attempt to re-create that in my own little kitchen I decided to mix the warmth of cinnamon spice into my kettle corn and I was pleasantly surprised with the results. Enjoy this sweetly spiced popcorn with a hot mug of apple cider (or cocoa) and cozy up with a blanket and silly Christmas movie. Tis the season!

Cinnamon Sugar Dessert Popcorn

1/2 cup popcorn kernel's 

1 tablespoon unsalted butter

1 tablespoon coconut oil

2 tablespoons sugar

1/2 teaspoon ground cinnamon

Salt for sprinkling 

Place the oil and butter in a saucepan, melt. Pour in the popcorn, sugar and cinnamon and stir to coat the kernels. Place a lid over the pan and shake every so often to ensure even popping and no burning. Once the popping slows down remove from heat and pour into a large bowl. Sprinkle with salt and toss to combine.
